Salted Dark Chocolate Oatmeal Cookies
(adapted from http://www.eatbetteramerica.com)
These are seriously the bomb. I crave salt just as much as I crave sweet, so these were the best of both worlds.
3/4 cup sugar
3/4 cup packed brown sugar
1/2 cup canola oil
1 tsp vanilla
1 egg (I used just the egg white part)
2 cups whole wheat flour
1/2 cup quick cooking oats
1 tsp baking soda
1/2 tsp sea salt*
dark chocolate-you be the judge in how much you use 🙂
*Sea salt really makes the “salty” flavor. I’m sure regular iodized salt would work but sea salt really gives it the kick!
Preheat the oven to 375. Beat sugar, oil, vanilla and egg white in a large bowl. Mix in the flour, baking soda and salt.
Drop cookies onto ungreased sheet and throw a
huge fingernail-sized piece of dark chocolate on top of each cookie dough. Sprinkle with a little extra sea salt and a dash of raw oats.
Bake 7-10 minutes depending on how doughy you like your cookies.
I omitted the 1/2 cup of butter it called for, but with the butter each cookie has 110 calories. NOT BAD-I felt so much less guilty when I ate half of the dough before the cookies even made it to the cookie sheet.
