- 2 eggs, lightly beaten
- 2-3/4 cups all-purpose flour
- 1-1/2 tsp cinnamon
- 3/4 tsp baking soda
- 1/4 tsp salt
- 2-1/2 cups peeled & chopped Granny Smith apples (approx. 3 medium-sized apples)
- 1 tsp lemon juice
- 1-1/2 cups sugar
- 1 cup cooking oil
- 2 tsp vanilla
- 1 cup chopped pecans (optional)
Preheat the oven to 350 degrees. Grease and lightly flour a pan (I usually use a loaf pan that’s 9×5)
