Baking my way out of summer

Today is officially my last day of summer, who’s with me?!  School will probably take its toll on blogging, but I still hope to post on most days.  Let’s face it-the support and encouragement from the bloggy world is unreal !

A failed goal for the summer was baking more.  As a last hoorah I whipped up quite the masterpiece mixing summer and fall, banana and pumpkin.

Pumpkin Banana Bread

Pumpkin Banana Bread

1 egg, beaten
1 cup whole wheat flour + 1/2 cup all-purpose flour
1 tsp pumpkin pie spice
1/2 tsp baking soda
dash of salt
1/2 cup mashed banana
1/4 cup pumpkin
<1/2 cup sugar
1 tsp vanilla

Grease and lightly flour a 10-inch tube pan (or whatever size pan you’re cooking in).  Preheat the oven to 350 degrees.

In medium bowl, stir flour , cinnamon, baking soda, salt.  In a small bowl, mash banana with a fork.

In large bowl, stir sugar, banana, egg, vanilla, and pumpkin.  Add dry ingredients to the wet.  Use an electric beater for thorough mixing, although I just beat it by hand and it turned out fine.

Bake in a 350 degree oven for 30-35 minutes.

Don’t let it cool…eat it when it’s warm and mushy! 

Fact:  I can’t eat the edges on baked bread.

Cucumbers and pancakes is not the best combo.

Fact:  I have to have something green at every meal, except breakfast.  [Still cannot fathom sucking down spinach in smoothie form.]

This is one serving, yet there is another huge pancake underneath the one pictured.  This is a protein pancake no less.  Due to the lack of eggs and oats in my house, I had to be creative.

Chocolate Protein Pancake

1 scoop chocolate whey protein powder
1/4 cup milk
4 T flour (I used whole wheat)
3/4 tsp baking powder
dash of sea salt
1/2 tsp vanilla extract
2 Tbsp plain Greek yogurt

Mix dry ingredients in a bowl.  Add wet ingredients one at a time.  Grease a skillet and flip yo pancakes.

Just don’t add cucumbers as your side.

Today should be required by law to be a day of relaxation, yet I’ll be running around like a maniac trying to get school supplies, finalize my schedule, and try to unnerve.  Enjoy your weekend & if you’re in the path of Irene, STAY SAFE!

  1. Dude that pumpkin naner bread sounds fabulous! I’ve been a nutter for pumpkin lately so I’m definitely bookmarking this.
    I always get nervous about the first day, mainly I worry about finding the locations of my classes and not looking like a lost bafoon haha 😀 And favorite breakfast for lunch food has to be a big ol bowl of cold cereal 😛

    I just started up again at school too, and it’s pretty tough to find time for blogging with classes & all going on. Regardless, I’ve found that I need to make it a priority though because of the awesome sense of community 🙂

    i get nervous for the first day of all my classes, every semester! really any time i have to meet new professors and people. first impressions are super scary no matter how old you are! (or maybe i’m just a loser)

    i honestly couldn’t pick a favorite breakfast food. i looove my scrambled eggs and i loove parfaits of any variety. i also make grilled PB banana tortillas for breakfast and love those too!

    • No I am right there with you on having to make a first impression! It’s hard to have to find a new routine every.semester.

  4. You should try my Green Monster Cakes. It has spinach blended into the pancakes, and I SWEAR you cant taste it. It tastes like the cinnamon and yogurt flavor you add to the batter, I PROMISE. You should try it 🙂

  5. I can’t do spinach smoothies either so I feel ya on that one girl! This recipe looks fantastic, I love these two ingredients and together- perfection 🙂

    That looks so yummy! I might try making those pancakes, actually. I love using Greek yogurt in recipes instead of oils, it adds protein and calcium and makes it healthier/less fat.

    Green smoothies are pretty good… you don’t taste the spinach, but if the fact that it’s Green grosses you out, use a bunch of blueberries in it because they turn everything a pretty shade of purple, hehe.

    I got nervous about the first day of school when I went to school… I don’t go anymore, it’s kinda weird when school starts for people and I realize I won’t have to deal with it again until I have kids one day, lol. As for breakfast foods… I could eat cereal all day. Or pancakes, they’re awesome too!

    • Hm I might have to try the blueberry trick. I think I’ve convinced myself I can taste the spinach, and seeing green doesn’t help either!
      Ah i cannot wait for the day when first days aren’t a yearly thing anymore!

    I usually get a little nervous on the first day of school. Not as nervous as I was when I first started my internship (that day, I literally felt like I was going to barf). I usually just get butterflies in my stomach!

    Breakfast for lunch?!? YES PLEASE! I ❤ breakfast!

    Your pumpkin bread looks friggin yummy! I always get a little nervous as i havn’t seen everyone in a while but once I get in there it’s always great to have a good catch up 🙂 I hope you get a bit of relaxation in before your classes begin. My favourite breakfast for lunch…and dinner…and supper food is eggs (if they count as a breakfast food)!

That pumpkin bread looks delicious, and I’m so with you on not being able to eat the edges on baked goods… I always trim mine off too 😆 And ditto on not being able to eat anything green at breakfast. I’ve never been keep on the whole green monster thing too, and the thought of adding spinach or kale to my smoothies just gives me the heebie jeebies. I like my smoothies yellow, pink, or purple in hue, thank you very much. And pancakes for lunch sound fantastic, but I’ve really been loving yogurt messes for lunch lately, so I’m going ot have to go with that.

  11. I had pancakes for lunch today! Except the whole cook on skillet part didn’t work out well and I had to finish it in the microwave. Yours look like they turned out a lot better then mine!

    Yep, I always get nervous before the first day of school. It’s mostly because of those introduce yourself to the class games that happen every year without fail.

    lol I had breakfast for lunch yesterday, I went with oatmeal. Though I do agree with you pancakes are a winner every time 🙂
