Brown rice protein powder muffin top

Hello hello favorite nighttime snack.  I adapted the recipe from my favorite blog mama StuftMama, whose recipes are always beyond delicious and nutritious.  I decided to knock out the flour and add a little protein powder from her Calm me Down Low Carb Cookie.

Brown Rice Protein Muffin Top

2 Tbsp pure pumpkin
2 Tbsp unsweetened applesauce
1 egg white (3 Tbsp egg whites)
1 Tbsp chocolate brown rice protein powder
cinnamon
packet of stevia
splash of almond milk
Microwave for 4 minutes.  Top with melted dark chocolate and almond butter.  

So, so good.  I always try to get in a protein and fat source about 30 minutes-1 hour before going to bed.  Because 1) I can’t go to bed hungry.  And 2) I wake up before the crack of dawn and don’t want to have to eat a HUGE meal before heading over to the gym.

I’m off to church and then doing a back & chest workout later this afternoon with some incline walking/sprints.  Switching things up again to keep the bod guessing.

It’s been too long…

Man oh man do I make futile promises or what?  I have seriously missed the blog world over the past year.  Even though I’ve been caught up in the whirlwind of being a busy college student and working, I still read everyone’s blog like it’s my job.

I figured summer would be low-key enough to pick this thing back up but time is flyin’ on by and I haven’t posted once! In the meantime I’ve been staying busy…

traveling…

being a mommy to this little baby…

cooking and eating lots of good food with friends…

trying to survive the heat down in good ol’ College Station…

and I am now officially certified as a personal trainer!!!! Praise God!

My passion for fitness and healthy-living has not wavered one bit.  I have so many fitness-related goals for the next year that I’m so excited about!

I hope to keep updating the blog and getting back on track, even if it means short and sweet posts.  This online community blessed me so much last year and it left a gaping hole in my heart!

Here’s to a new start (hopefully) 😀

Belated WIAW

Oh man I have completely deserted my beloved blog!  This week was (and still is) crazy stressful, so until the tests are over tomorrow, I’ll have to keep it short and simple.  I’ve just been studying (aka sitting on facebook and chatting with friends at Starbucks) and eating (to procrastinate even more) and going out (no explanation needed).  Three tests have bogged me down this week and I’m also in the process of applying for STUDY ABROAD and my application for the university is due in a WEEK. I didn’t even realize it was Thursday [which could be a good thing I suppose] but WIAW flew right past me.  So lessss gooo

Lessons I’ve learned:

  • always bring extra food to campus ; better to bring home extra than not have enough!
  • you guys were right-eating carbs before bed has been the best decision I’ve made since school started.  After having sleeping problems for months, I’m now sleeping like a baby because my stomach isn’t growling every 4 seconds
  • college can be fun if food and exercise isn’t the main focus <– finally understand this!

Okay I’m back to studying.  Until tomorrow friends when I can whip out a real post!

What’s your favorite food to pack for a day when you’re out and about?  my favorite foods are alllll refrigerated, so I usually bring just a sandwich, fruit, and some veggies.  I’m severely lacking in protein during the day!

I realized that bowls (and the bullet cup) and I are bffs, as in I can’t even remember the last time I ate off of a plate.

spinach, tuna, avocado, cottage cheese, spicy mustard, honey *don't knock it til ya try it!*

I realized that I eat too much broccoli after being nicknamed ‘the Broccoli Queen’.

I realized that I don’t like pumpkin.  Oh the horror.  I’ve tried in every way possible, but unless it’s baked into banana pumpkin bread or in the form of pumpkin butter, then get outta my pantry.

<– total winner status”] I realized that I really miss running.  Basically I miss doing cardio in general.  The next three days are ‘off’ days which means me and the elliptical, the parks, and my running shoes are all having a huge reunion.  Hopefully there is rain involved.

I realized that the rule “don’t eat any carbs three hours before you go to bed” should go to hell.  Bowls of cereal are what keep me going at night when my bed literally has my name written all over it.

 

I realized that these muffins are the bomb, I feel like a 90 year old eating a bran muffin, but Amanda is a genius for creating them.  I also realize every muffin I’ve ever posted on the bloggy has been in these dang red muffin liners.  Hobby Lobby needs to hook me up with some new colors sooner rather than later.

I followed the exact recipe, except used quick oats instead of rolled, extra cinnamon, and omitted the raisins. 

I realized that I’m off to my very first big girl job internship interview this morning.  Scratch that, I have two interviews.  All the nerves of this week have finally taken their toll and I’m ready to crash as soon as they’re over.  Have a safe and beautiful Friday night loves!

WIAWIAWIAWIAWIAW

It’s finally Wednesday!  How is your week going so far?  This week has been crazy as I’m applying to copious amounts of internships and preparing everything for a career fair tomorrow.  When did I grow up and now actually have to find a real career?!  Anyways, atleast I can relax today as I peruse your food pictures thanks to Jenn 🙂

 

Or what I’ve been eating all week. As time flies, my tastebuds and my food get weirder and weirder.  My roommates are constantly giving me the stank eye because of the weird concoctions.Oats with sunflower seed butter, honey, pomengrante chobani
I’m finally incorporating pumpkin into everything, even though it’s still 105 degrees outside.  Bleh.Baked oatmeal with pumpkin, cinnamon, stevia, topped with almond butter, pumpkin butter, extra cinnamillionSame thing with an egg white and banana on ze sidetuna mess – tuna, cottage cheese, spinach, broccoli, avocado, salsa & toasted ww breadstrawberry kiwi smoothies – because it’s not officially fall yet!almond butter & pumpkin butter sandwich[i don’t know why these are so small] but these pancakes stole.the.show.last night.  Thank you KAT for the brilliant idea of green monster pancakes!  Sweet & Green Pumpkin Pancakes 1/2 cup oats
1/2 cooked & cooled sweet potato
1/4 cup plain greek yogurt
1/4 cup organic pumpkin
1 egg white
dash of salt
1 cup spinach
a little milk to get it all going

Blend everything together, and cook on a skillet like pancakes!  SO so so good.  I can’t do spinach in smoothies [yet] but in my pancakes?  Yes please. Asian-flavored rice with veggies, corn, avocado, extra broccoli, fresh tilapia and salsa messlots of <a title="Cookie dough for breakfast cookie dough smoothiesand lots of cereal messes – particularly Multigrain Cheerios

Dementors

 LOVE.

Happy weekend!  How was your Friday night? I had a girls night and went to see One Day and bawled my eyes out.  Which can mean one thing and one thing only-froyo.  [If you want to cry and need an excuse to indulge in some ice cream, One Day is your movie.]

This morning started off swell with a cereal bowl, something I’ve gone way too long without.

Multigrain Cheerios, Kashi Crunch, wheat bran, frozen blueberries, and Arrowhead Mills Puffed Rice Cereal thanks to the wonderful people at Swanson Health Products.  Kashi is my homegirl, but sometimes I need something a bit less dense.  The puffed rice cereal added a light and fluffy texture and I was left satisfied for quite a few hours without feeling like a bloated cow.  The taste wasn’t extravagant, but I’m a huge stickler about texture, and these were phenom.

With breakfast under my belt, I was ready to tackle a good day…until my eyes feasted upon some ticks roaming around on the couch.  Swollen, blood-thirsty dementor ticks.  Be thankful no pictures were taken.

1.  I am not a bug person.
2.  I slept on this couch 2 nights ago.
3.  I am not a bug person.

We have 2 labs that I guess tracked them in, so now we’re all on edge and having the fake itches.  If you’ve ever had a tick problem, how do you get rid of them?  I don’t want them sucking out my soul tonight while I sleep.

Speaking of sucking souls, school is slowly sucking my energy already.  Two weeks in and I’m pooped.  Thank God (again) for Starbucks and caffeine.

This is what my day will consist of yet again.  But what would a weekend be in this hicktown without a little country music?  I’m giving the twang one last shot at a country music festival today, and after that we’re officially breaking up.  Not that we were ever together.

And it will also consist of this: good food.

Cookie dough Ice cream smoothie with Brown Rice Protein powder.  Best. Addition. Ever.  It doesn’t have a funky aftertaste or clump up like whey sometimes does.  I also made my pancakes with this protein powder (sans egg) and I couldn’t get enough of the flavor.  New favorite protein fo sho.

Kettle corn topped with melted dark chocolate and Swanson Organic Coconut Oil.  So long EVOO, I’m loving the sweetness the coconut oil adds to just about everything!

Including roasted green bean fries.  Another new addiction.

Enjoy your Saturday and say a prayer of THANKS for your family and friends, and for the families who lost a loved one on 9/11.  So thankful for the people who choose to devote their life to protecting us and our country!

WIDW

Welcome to What I’m Doing Wednesday.  I may have jinxed myself last week when I bragged about blogging everyday, because it’s gone downhill fast ever since.  I’m still here though!  Just trying to figure out how exactly to fit blogging into a busy schedule without compromising studying and friend time! [Any tips?!]

Routine is my middle name, in fact, it should be my first name.  Being a stickler for routines ended me up in a bad spot, so this semester I’m focusing on straying from said routine.  There are some benefits to having a routine-like waking up at a consistent time every morning, making sure to eat, etc-but revolving my life around routine is not an option anymore.  So YES I’d like to get in a “routine” of blogging to be able to write evrrrrry day. But as long as I’m under the financial coverage of my parents, school has to come first.  I don’t want to set up a routine to ensure a post everyday because I KNOW it’ll be broken tomorrow.  This is yet another baby step in being spontaneous!

This basically summarizes my mornings…slurping down a cookie dough smoothie (1/3 cup oats, 1 scoop protein powder, cinnamon, 1 tsp chia seeds, frozen banana, dark chocolate pb, 2/3 cup almond milk) every morning.  When I get hooked on something, I get really hooked.

But this happens first and foremost.  Coffee God.  Getting up early and getting to sit in the stillness of the morning and spending time with the Creator, whoooop!  Having a hot cup of coffee doesn’t suck either, especially now that the weather is chillay!

And then I get my workout on.  Yes, I feel mighty awkward posting this picture, but tan muscles…here I come.

Class. Eat. Class. Eat. Class. Repeat.

And then I do things like Water Zumba-only a great workout for the tummy [from laughing].  I have a new respect for the elderly who do water aerobics on a regular basis…moving in water is TOUGH.

Go to concerts and go [country] dancing:

Which might I add, probably isn’t what you think.

And in the midst of it, I forget to take pictures.  Except for when I eat some more:

I just got my Swanson products in the mail (SCORE) so I’m on the lookout for yum recipes using wheat bran/coconut oil/pumpkin seeds/rice protein/kamut puffs all in one.  Review coming asap!
