It’s been too long…

Man oh man do I make futile promises or what?  I have seriously missed the blog world over the past year.  Even though I’ve been caught up in the whirlwind of being a busy college student and working, I still read everyone’s blog like it’s my job.

I figured summer would be low-key enough to pick this thing back up but time is flyin’ on by and I haven’t posted once! In the meantime I’ve been staying busy…

traveling…

being a mommy to this little baby…

cooking and eating lots of good food with friends…

trying to survive the heat down in good ol’ College Station…

and I am now officially certified as a personal trainer!!!! Praise God!

My passion for fitness and healthy-living has not wavered one bit.  I have so many fitness-related goals for the next year that I’m so excited about!

I hope to keep updating the blog and getting back on track, even if it means short and sweet posts.  This online community blessed me so much last year and it left a gaping hole in my heart!

Here’s to a new start (hopefully) 😀

Cookie dough for breakfast <3

I can’t believe it’s another Monday!  Ready for a new week?  This is my last *free* week before the first round of tests so I’m taking advantage of extra relaxation time and plan on going to the mall, watching some trash TV and hopefully whipping out some new recipes.

Weekend confession: I’m starting to like country music thanks to Ziegfest 2011.  Even a month ago, I never imagined those words coming out of my mouth.  Apparently there is hope in the world.

Let’s start this week off on the right foot shall we?  With a cookie dough smoothie?  This filling breakfast has been rocking my mornings and I may or may not break 54 traffic laws on my way home from the gym just to dig into it.  While I don’t advise breaking any laws, please indulge yourself.

Cookie Dough Smoothie
(based off of Kath’s Dough Boy Smoothie)


The night before, combine:

  • 1/3 cup oats (quick & rolled both work)
  • 1/2 tsp chia seeds
  • lots of cinnamon
  • Optional: add a scoop of protein powder – I’ve used whey and rice and both make it taste like ice cream.  If you do add extra dry ingredients, make sure to bump up the amount of liquid you use.
  • Cut up a banana and freeze overnight.

When you wake up fungry, blend up the overnight oats with a frozen banana and a spoonful of nut butter. [Add a tad of liquid to get things moving if needed; the less liquid you use, the more doughey it will be.]

Mondays are my busiest day, which means my love for Monday has decreased significantly.  I guess I should practice what I preach and make the most of it.  Smile, encourage others, and call someone just to tell them you loveee them!

Dementors

 LOVE.

Happy weekend!  How was your Friday night? I had a girls night and went to see One Day and bawled my eyes out.  Which can mean one thing and one thing only-froyo.  [If you want to cry and need an excuse to indulge in some ice cream, One Day is your movie.]

This morning started off swell with a cereal bowl, something I’ve gone way too long without.

Multigrain Cheerios, Kashi Crunch, wheat bran, frozen blueberries, and Arrowhead Mills Puffed Rice Cereal thanks to the wonderful people at Swanson Health Products.  Kashi is my homegirl, but sometimes I need something a bit less dense.  The puffed rice cereal added a light and fluffy texture and I was left satisfied for quite a few hours without feeling like a bloated cow.  The taste wasn’t extravagant, but I’m a huge stickler about texture, and these were phenom.

With breakfast under my belt, I was ready to tackle a good day…until my eyes feasted upon some ticks roaming around on the couch.  Swollen, blood-thirsty dementor ticks.  Be thankful no pictures were taken.

1.  I am not a bug person.
2.  I slept on this couch 2 nights ago.
3.  I am not a bug person.

We have 2 labs that I guess tracked them in, so now we’re all on edge and having the fake itches.  If you’ve ever had a tick problem, how do you get rid of them?  I don’t want them sucking out my soul tonight while I sleep.

Speaking of sucking souls, school is slowly sucking my energy already.  Two weeks in and I’m pooped.  Thank God (again) for Starbucks and caffeine.

This is what my day will consist of yet again.  But what would a weekend be in this hicktown without a little country music?  I’m giving the twang one last shot at a country music festival today, and after that we’re officially breaking up.  Not that we were ever together.

And it will also consist of this: good food.

Cookie dough Ice cream smoothie with Brown Rice Protein powder.  Best. Addition. Ever.  It doesn’t have a funky aftertaste or clump up like whey sometimes does.  I also made my pancakes with this protein powder (sans egg) and I couldn’t get enough of the flavor.  New favorite protein fo sho.

Kettle corn topped with melted dark chocolate and Swanson Organic Coconut Oil.  So long EVOO, I’m loving the sweetness the coconut oil adds to just about everything!

Including roasted green bean fries.  Another new addiction.

Enjoy your Saturday and say a prayer of THANKS for your family and friends, and for the families who lost a loved one on 9/11.  So thankful for the people who choose to devote their life to protecting us and our country!

WIDW

Welcome to What I’m Doing Wednesday.  I may have jinxed myself last week when I bragged about blogging everyday, because it’s gone downhill fast ever since.  I’m still here though!  Just trying to figure out how exactly to fit blogging into a busy schedule without compromising studying and friend time! [Any tips?!]

Routine is my middle name, in fact, it should be my first name.  Being a stickler for routines ended me up in a bad spot, so this semester I’m focusing on straying from said routine.  There are some benefits to having a routine-like waking up at a consistent time every morning, making sure to eat, etc-but revolving my life around routine is not an option anymore.  So YES I’d like to get in a “routine” of blogging to be able to write evrrrrry day. But as long as I’m under the financial coverage of my parents, school has to come first.  I don’t want to set up a routine to ensure a post everyday because I KNOW it’ll be broken tomorrow.  This is yet another baby step in being spontaneous!

This basically summarizes my mornings…slurping down a cookie dough smoothie (1/3 cup oats, 1 scoop protein powder, cinnamon, 1 tsp chia seeds, frozen banana, dark chocolate pb, 2/3 cup almond milk) every morning.  When I get hooked on something, I get really hooked.

But this happens first and foremost.  Coffee God.  Getting up early and getting to sit in the stillness of the morning and spending time with the Creator, whoooop!  Having a hot cup of coffee doesn’t suck either, especially now that the weather is chillay!

And then I get my workout on.  Yes, I feel mighty awkward posting this picture, but tan muscles…here I come.

Class. Eat. Class. Eat. Class. Repeat.

And then I do things like Water Zumba-only a great workout for the tummy [from laughing].  I have a new respect for the elderly who do water aerobics on a regular basis…moving in water is TOUGH.

I just got my Swanson products in the mail (SCORE) so I’m on the lookout for yum recipes using wheat bran/coconut oil/pumpkin seeds/rice protein/kamut puffs all in one.  Review coming asap!

WIAW with a purpose

 It’s Wednesday, naw meen?!  Thanks Jenn for hosting another fabulours WIAW!My eats have been less adventuresome than they were this summer when I had all the time in the world to prep.  This is what I’ve been living off of since school started.  Easy.  Quick.  Tastay.

many overnight oats in a blender with frozen bananas and pb - favorite breakfast

and lottssss of cereal!———-This is totally not WIAW-related, and I don’t want to sound too preachy but this has been on my heart constantly lately!  “and he determined the times set for them and the exact places where they should live.  God did this so that men would seek him and perhaps reach out for him and find him, though he is not far from each of us.” – Acts 17:26I know for me, I am not happy with where I am physically [located] right now.  I constantly question “is this really where I’m supposed to be”?  Because really, I’m a firm believer in liking the town where you choose to go to college!  I try to maintain a positive attitude, but that doesn’t change the fact that I straight up don’t like it here.  This verse hit me hard.  I know that it wasn’t a mistake or a coincidence that I chose to come here.  Although I don’t like it, there is a greater purpose behind it that hopefully one day will be so clear.  After reading numerous blogs, I realize I’m not the only one who feels completely lost, unsure if this is the right move and place, etc.  But know that there is a reason for where you are and what you’re doing.  God’s timing is so perfect, so trust it!———-Have a happy happy Wednesday and after today, we’re on the downslope to the weekend 😀Favorite ways to eat sweet potatoes?  I like mine steamed in the microwave topped with maple syrup and almond butter.  Sweet tater fries, in smoothies, etc…but I need to jazz them up every once in a while!

Quotes that make you rethink your life are the shizzznettttttt.  Sometimes I’ll Google quotes and just sit and read.  People are so wise!

I’ve been putting off a post about why I don’t want to be back at my school this semester, but I don’t want to dwell on it and make everything worse.  In a nutshell:

  • my ED days began here.  I haven’t lived a day here without those rampant thoughts racing through my mind.  Restricting me from eating, from going out with friends, and from living.  Being around so many people the same age draws me into the comparison trap like no other, making these thoughts worse and worse and worse and worse…
  • I lost most of my friends over the course of last year because of that.  I isolated myself, and I’m paying the steep price right now.  Making new friends ain’t the easiest thing for this girl, but I’m hoping that everything falls into place this semester.
  • discomfort.  Have you ever been to a place where you just don’t feel comfortable or you don’t fit in?  I just happened to make that place my school.  Last year it was a daily struggle to get my butt out the door and go to class and live in this city.
  • being away from my family.  I’m a family girl, nough said.

In the past, all I could think of was how much I hated it here.  Because that’s *what I thought about all day long* I was miserable and lonely.  Yesterday I could have sat around and thought about how much I hated it and how I didn’t want to be back.  Instead, I tried to get excited about a fresh start and the positives about being back.  And what a difference it makes!

[I completed one of my August goals – going out of my comfort zone.  A year away from going out made me miss it and I’m so glad I decided to skip my early bedtime in my comfort zone and go out with my roomie.  This even included having [another] bowl of cereal late at night and not eating “on schedule”.  Vick.tor.ee.]

My point is, spending all day thinking that I’m fat is going to make me feel fat, lose confidence, and hate life.  Spending all day thinking about how I hate it here will bring me back to that place of misery and loneliness.  Spending all day fretting about working out will make me a crazy woman and no fun to be around.  If I think about love, friends, progress, family, God all day, then that’s who I’m going to be.  That’s what my life will be about.  That’s what it should be about.

I didn’t make it to the grocery store yesterday, so I’m living on slim pickens.  Here are picchas of my (unfinished) room:

The only foodie pic I’ve gotten so far – due to my friends’ lack of knowledge about my blog – was the most perfect breakfast besides a cookie dough oatmeal smoothie.

Protein pancakes a la Gina!  I subbed a flax egg for a real egg, and 2 Tbsp quick oats for flour and they turned out surprisingly huge well.

I’m heading back home for the night for a funeral, my brother’s first cross country meet, and a baking class.  Thankfully I don’t have to conquer my fear of the rec center yet.  Have a SUPERFANTASTIC Friday and a beautiful, restful weekend!

WIAW surv

Every week I anticipate WIAW (thanks Jenn!) and think I’m going to do something fun and creative.  But alas, it is another Wednesday and that plan failed. Again.

I now have to take all of my pictures on my camera phone.  Shout out to my smartphone, I’m obsessed, thanks for giving me wordswithfriends and sudoku at my fingertips 24/7.  All I want is my camera to show you the AMAZING food I got to indulge in over the weekend.  Oh well, here’s a little survey to spice up my typical boring Tuesday noms.

Mid afternoon snack: protein cake topped with AB & apple with cinnamonnn

3 favorite local restaurants: Madden’s Casual Gourmet, The Corner (for fish tacos-favorite meal ever) and Kyoto Sushi, what else?

3 favorite chain restaurants: CHICKFILA, Jason’s Deli, Subway.

3 least favorite foods: whipped cream, fruit pies, white bread.  And working at a coffee shop slathering that white goop on drinks all day long made me hate whipped cream even more.  Yucckyuckyuck.

Dinner: grilled tilapia, long grain rice, salad, berries, and unpictured home-made WHOLE WHEAT BREAD. delissssshhhh

Favorite version of PBJ: strawberry jelly & crunchy PB.  Adding a piece of muenster cheese doesn’t hurt either.  I wish I still ate PB&J for lunch every day…now I settle for monster salads or some other veggie mush.

Lunch: huge salad with veggies, egg whites, slivered almonds, sunflower seeds, cottage cheese - protein & fats galore

How do you like your eggs:  scrambled, over-easy, microwaved? As long as they’re covered in salsa or mixed with spinach, I’m a happy happy girl.

How do you take your coffee/tea?  BLACK iced americano, extra ice.  Every once in a while I’ll add a little almond milk or skim milk, but that’s on a rare occasion.

Do any foods bring back bad memories?  Kashi Blueberry and Diet Coke!  Those were my staples at my lowest point and caused a severe lack of calories and nutrients.  I could never give up Kashi for real, but it doesn’t taste as delightful as it once did.

What foods bring back good memories? peanut butter & honey sammys and dunkaroos. Oh how I long to be 6 years old again!
