September goals

First, thank you SO much for all of your encouraging comments yesterday! ¬†It’s nice to have people to relate to and I’m so thankful for this community and your honesty! ūüėÄ

I must say I’m quite impressed with my diligence in cranking out a post every day so far despite a busy schedule. ¬†Let’s see how long I can keep this up, shall we?

Happy September!

It should look like this outside. ¬†Instead, the days still fall in the 100-degree range and the landscape is brown, aka dead. ¬†But I’m not bitter. ¬†Because a new month means fresh goals!

August goals recap:

  • went out of comfort zone many times – be it staying out late, actually going out, going on yet another trip with no guarantee of exercise, moving back to school

  • conquer the weight room at the school rec center – did NOT happen because GOOD NEWS: I joined a new gym! ¬†This is my first paid gym experience, and it’s been worth it so far. ¬†It even has a ladies’ room that some of you mentioned, so all of the fear is gone. ¬†[the eye candy in the main gym doesn’t totally suck either]
  • followed a new split strength training plan & loved working my individual muscles hardcore

Sunday: legs
Monday: back & abs
Tuesday: chest & shoulders
Wednesday: OFF
Thursday: back & hamstrings
Friday: shoulders, bis & tris
Saturday: OFF

  • ¬†grocery budget – much success on my first [food] shopping spree, filled an empty fridge and pantry for under $50 ! and that’s including spices, flours, etc


  • rested alot – in Asheville, took a few days off here and there after I moved in

September goals: 

1) Focus on abs more – devote 3 days a week to a full ab routine. ¬†Gotta get that 6-pack in time for the winter! ūüėČ

2) Try a new recipe – send me your favorite! ¬†Time isn’t on my side during the school year so I won’t have time to make all the goodies I want. ¬†ONE recipe is my goal. ¬†Sounds easy, yet I know if I don’t make it a goal, it won’t be happenin

3) Join an organization – I’ve joined my fair share of groups and clubs since coming to college, but haven’t found my “niche” yet. ¬†THIS is the semester, I can feel it!

4) ¬†Stretch daily – I’m super bad about stretching, yet I have a desire to do the splits at some point in my life. ¬†Even if it’s just for a few minutes while catching up with my roomies or taking a study break, I am declaring stretching a MUST.

5) Wake up 5 minutes early every morning for prayer time – it’s crazy how fast prayer gets pushed to dead last on the to-do list of mine every day. ¬†5 minutes is nothing and really, should be much longer.

Any recipe suggestions? ¬†Specifically ones with pumpkin since it’s *officially* time for me to start celebrating fall despite the wicked temps

Are you in/have you been in any organizations? ¬†I’ve tried just about everything – from intramurals to bible studies to all girls organizations to community service groups. Obviously I’m hard to please ūüėÄ

Healthified Chocolate Cake

Adapted from VegWeb *for all you Veganers out there*

1 2/3 cups flour (I used 1 cup white, 2/3 cup whole-wheat)
1 cup sugar
1/3 cup cocoa (Hershey’s Special Dark)
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 cup applesauce
1 cup unsweetened chocolate almond milk
2 egg substitutes

Mix dry ingredients together. ¬†Mix in wet ingredients, but make sure you don’t overmix!

Pour batter into a greased loaf pan and bake for ~50 minutes at 350*F.

I won’t lie, cake is NOT a favorite dessert of mine. ¬†Want to know why? ¬†Matilda. ¬†Watching a 6-year old boy eat a friggin 9 pound cake made me want to vomit and to this day, chocolate cake holds a bad rap in my heart. ¬†But…what do ya know…a chocolate cake is what resulted from tonight’s baking adventures. ¬†(How are my Saturday nights so so exciting?)

I’ve said it before and I’ll say it again-when the little stresses and problems in life get to my, my first instinct is to turn to either severely controlling what goes into my body, or not giving a rat’s booty and shoving food in faster than I can swallow. ¬†Lately, there’s been a lot of “little” stressors that lead me to that stupid fork in the road: give into the little voices or turn to Jesus-the main man who saved me from all of the pain in this world?

No counseling, no medicine, no diet plans healed me from disordered eating. ¬†God really is the only reason I’m alive and thriving today. ¬†It was as simple (okay not so simple) as turning my focus away from myself and turning towards the Creator of the universe and the price he paid to save my little ol’ measly life.

Relationships have been the main perpetrator in all these little things getting to me. ¬†I realize how every single person is going to fail me at one point or another, which is hard for me to stomach. ¬†But God is always always always waiting for us to run back to Him. ¬†Even though I’ve ignored him pretty much all summer and have been overly focused on myself, He’ll still take me back and love me regardless!

So so awesome. ¬†That security has been the biggest comfort in the past year as I’ve struggled to recover and deal with other broken areas of my life because of disordered eating. ¬†Suchhhh a blessing to have that!

Zumbaaaaa Ayiyiyiyi

I can’t believe it’s already another Friday! ¬†Why does time fly so darn fast ūüė¶ During the summer, Fridays are not super exciting, but in the next few months Fridays will again be my saving grace.

Yesterday was a day of new Рin food and in exercise.  Gotta shake things up a bit every once in a whizzile.

Even though I’m no match for Serena Williams, there are few sports I enjoy more than tennis. ¬†Yesterday morning I woke up and headed straight for the tennis courts (after a monster cereal bowl) to lobby the ball for a while with a friend. ¬†Fortunately for you, there were no pictures taken. ¬†I had plans for my “cardio” day, but nixed them in favor of tennis and a cardio yoga DVD.

AND I tried my very first ever stinkin’ ZUMBA CLASS. ¬†I’ve been DYING to try it, but could never find (or afford) a class nearby. ¬†Welp, I got this one for free and I will not complain about dishing out $5 for the next class. ¬†It was freaking awesome. ¬†Cardio-wise, it wasn’t very intense, but my hips definitely need a good loosening up and for real, you can dance and nobody judges you. ¬†Why have I hesitated on taking ZUMBA?!?!? ¬†Honestly it was just nice to stay away from the whirring of the gym machines for a day and take cardio to a whole new level of fun.

Chai Coffee Smoothie

Instead of fueling up after yoga with my usual fruit smoothie, I threw in some Chai Tea Latte Bread in the mix along with 1/2 cup chocolate unsweetened almond milk, 1 Tbsp instant coffee, 1/2 cup vanilla Chobani, and a handful of ice.  Best. Smoothie. oftheweek.

Guess what else I built up the courage to try?

Southwestern Oats

SAVORY OATS. ¬†I’m all for trying new things, but I don’t like to waste food, and I like to enjoy my meals. ¬†So I don’t want to “risk” trying something new and punishing my tastebuds! ¬†I took the plunge and cooked 1/3 cup oats with 1 cup water, salt, garlic salt, and red pepper flakes. ¬†Once cooked, I added a spoonful of Plain Fage, corn & chopped bell peppers (from a can-not cheating at all) and topped with salsa. ¬†WHY WHY WHY have I not done this?

[PS – yesterday while babysitting, I added a crapton of spicy mustard and salsa to my salad, and received RUDE comments from the kids “ewwing” and gagging. ¬†Um, since when is mixing mustard, salsa, and hummus and dumping it on salad weird?]

A savory breakfast for dindin. ¬†I’m quite a content little mama right now.

Crafting came into the picture, too. ¬†Due to a lack of patience, I steer clear of crafts unless I have no choice because 1) I don’t want to clean up afterwards and 2) I don’t have the patience to finish them. ¬†Unfinished projects – 34463, Haley – 0.

If you’re like me and are looking for a craft that’s over and done with, this is lemon squeezy easy. ¬†Break up a bunch of crayons, pop them in the oven for 20 minutes at 170 degrees, and you get tie-dye crayons.

By the way, crafts have everything to do with healthy living.  Just sayin.

Chai Tea Latte in Carb Form

The baking bug bit me yesterday while I was craving a Chai Latte.  The result?  Chai bread!  Beware, you have to be a pretty big fan of chai, otherwise this bread is not for you.

Chai Tea Latte Quickbread

3/4 cup sugar
1/4 cup oil
1/2 cup water
1/3 cup non-dairy milk (I used Almond)
2 tsp vanilla
2 eggs (I used flax eggs)
2 cups flour (50:50 whole wheat:white)
2 tsp baking powder
3/4 tsp cardamom
1/2 tsp salt
1/4 tsp salt
1/8 tsp cloves

Prepare flax eggs (if using) ahead of time to let them develop.  Preheat oven to 400 degrees and PAM & flour a bread loaf pan.

The spices that make the Chai flavah - you could also add a dash of nutmeg

Mix all dry ingredients (except sugar) in a medium-sized bowl.  Whisk together to evenly distribute the Chai flavoring.

 

Mix sugar + all wet ingredients in a separate bowl.

Pour dry into wet and mix by hand. ¬†Don’t overmix-it should be lumpy bumpy.

Pour batter into the greased & floured loaf pan.

Now…put in the oven for 50 minutes (or until toothpick/knife comes out clean) and you now have a cheaper, doughier version of that latte you were going to run to Starbucks for!

Perfect smoothie mix-in. ¬†Breads give me my perfect smoothie texture, so chai smoothie…here I come!

WIAW Noobie

So this be my first ever WIAW. ¬†I successfully kept camera in hand as much as possible so I didn’t miss out on any foodies.

But first, I have to share the wondrous workout I did this morning.  Strength training leaves me feeling SO much better than doing cardio, and I fall harder for it every MWF that I do it.  I started with a HIIT on the cross trainer.

Elliptical HIIT #2
1:30 Resistance @ 4, Incline @ 10
:30  Resistance @ 15, Incline @ 10
1:30 Resistance @ 4, Incline @ 10
:30 Resistance @ 10 (sprint), Incline @ 10
Until you get to 20 minutes. 

Full Body Circuit

leg press + bicep curls

squat with 3 pulses

50 russian twists
30 jumping jacks
10 incline crunches
10 stability ball rollouts

2 x 12:
alternating lunges w/weights
chest press w/skullcrusher
plie squat with leg lift, holding med ball out
alternating cable row

50 russian twists
30 jumping jacks
10 side dips each side
10 stability ball rollouts

2 x 12:
wall squat with bicep curls
bent over row w/tricep kickback
hamstring curl machine
tricep pushdown

Vanilla Latte Oats

Hot & sweaty oatmeal for a sweaty girl. ¬†Usually I’m fungry and nearly eating grass on my way home from the gym, but today I channelled my inner patience and cooked these oats stovetop-the wait was worth the while. ¬†1/3 cup oats with almond milk and water (more liquid = more oats) with 1 Tbsp instant coffee. ¬†After cooked, I added half a scoop of protein powder, 1 Tbsp vanilla Chobani, topped with Chia seeds and White Chocolate Dreams PB. ¬†Winnaa winna oatmeal dinna.

A mid-morning bike ride left me needing a mid-morning snackypoo:

Have I ever heard of an Envy apple? No. ¬†But they were on sale, and not to mention the best flippin apple I’ve ever had in my entire life.

Lunch was sushi out with my momma.  If I could live in Japan, I would in a heartbeat.  Sushi every meal does not sound bad what. so. ever.

2 pieces of tuna - handroll with salmon, avocado, lettuce, and rice

A day off from work means a day on in the kitchen. ¬†Besides the ever-famous Cafe Americano, Chai Tea Lattes top the charts for my coffee addiction. ¬†I love bread, I love coffee chai, so why not combine the two? ¬†Plus…I ran out of apple cake, so my only option was to make another loaf of sumthin sumthin.

Apple Butter Granola

I have a granola tapeworm in my stomach.

CocoChoco Strawberry Smoothie

1/2 cup plain Fage, 3/4 cup unsweetened choc almond milk, 1 Tbsp dark cocoa powder, 1 cup strawburries, coconut extract, and stevia for sweetness.

The big snack of the day, dun dun dun…

I see cottage cheese messes all up in the bloggy world and I’ve honestly been too scared to try them. ¬†Conquering my fear of mixing something sweet into cottage cheese was the best decision I’ve made. ¬†I added some peanut butter au naturale and cinnamon, and LOVED THIS.

I ruined my dinner appetite, so I just had some grilled veggies and a fruit bowl, and nowwww about to go devour my last piece of apple cake.  Remind me to double the recipe next time.

Quinoa Wafer Cookies

Happy baking Sunday morning! ¬†I failed to celebrate Pancake Sunday, the oatmeal jar wouldn’t get outta my face. ¬†BUT that calls for a whole day playing in the kitchen, so be ready.

I have this wayyyyy too big bag of quinoa sitting in my pantry. ¬†Maybe I haven’t tried the right recipes or somethin somethin but I was not a huge fan the first time around. ¬†Seeing as wasting food is not an option, I had to figure out something, so why not make a dessert out of it? ¬†Veggies and grains are so yesterday. ¬†Thankfully this has already been done successfully so I didn’t have to think too hard.

Quinoa Wafer Cookies

Adapted from Bites & Bliss 

1/8 cup uncooked quinoa
1/8 cup oats
1/4 cup all-purpose flour
1 Tbsp canola oil
1 Tbsp agave nectar
1/8 cup maple syrup
1 flax egg
1/4 cup applesauce
1/8 cup dark brown sugar, packed
1/2 tsp vanilla + a little extra
1/4 tsp baking soda
1/4 tsp baking powder
dash of salt
1 tsp chia seeds (optional)

Preheat oven to 350 degrees. ¬†Spray a baking sheet with Pam and set aside. ¬†Prepare your flax egg and let sit while you fix up the rest of the ingredients. ¬†(One egg white can also be substituted for this if you’re not a fan of flaxyeggys!)

Whisk dry ingredients together, but leave out chia seeds and brown sugar.

Mix together wet ingredients in a separate bowl, including brown sugar. Beat for 1 minute.

Mix dry ingredients into wet. Add chia seeds.

The batter will be runny, unlike normal cookie recipes. I added a handful of extra oats to thicken it up a tad.

Spoon out the batter onto the greased baking sheet. Leave enough space between each cookie, because they DO spread ALOT.

Bake for 15-17 minutes. The bottoms burn quick, so keep your eye on them to ensure a soft, crumbly cookie that comes off the pan.

Can someone say healthy and delicious? They’re crazy soft and crumble to the touch. ¬†They’re wafer-thin, but I’m thinking they’d be a perfect topping for oatmeal, a mix-in for yogurt, or even blended up in a smoothie.

Eating More (Apple Cake) ?

Good EVENING! ¬†Why do I have no life and choose to sit around watching ABC News and baking healthy treats on a beautiful Saturday night? ¬†I will never understand my thought process…or maybe it’s this adorbz face that is making me stay home.

Ahhhhh I can’t get over the beauty of a rest day.  Working the morning shifts means I get off at 2:00 and have the rest of the day to do…nothing!  It’s so nice to have a clean-slate day to be a total bum productive citizen.

I noticed a few days ago that my head was exploding mid-day.¬† every. single day.¬† First I chalked it up to maybe a lack of sleep (yeah right I sleep like a baby), dehydration, allergies, whatever else.¬† So I got more sleep, rested more during the day, and drank more water.¬† No change.¬† WebMD=heaven for hypochondriacs.¬† One of the only things that matched my ‚Äúsymptoms‚ÄĚ was hypoglycemia but cmon, if I don’t get enough sugar from apple cake, nutella cookies and the sort, then I atleast get it from the massive amounts of fruit I shove down my throat on a daily basis.

Then I was blog stalking and came across Run With Spoons and voila, a post about hunger being a possible demon behind the headaches, moodiness, and tiredness. ¬†Hunger? ¬†Honestly, in my mind I think I eat a TON. ¬†So I started jottin down what I eat, when I eat, when the headaches come, when I’m fatigued beyond function, etc etc. ¬†And I realized I really don’t eat that much. ¬†As I increase my exercise load, I def don’t purposely increase my caloric intake because ‘that wouldn’t help me lose weight.’ ¬†Psh.

So eating more is on my agenda. ¬†More food?! ¬†Okay, this kind of scares me. ¬†And every time that I went to snack today, I had to convince myself that it was best for my body. ¬†It’s trial & error, but hopefully this works for my body and doesn’t take over my mind!

After bumming around for a few hours watching My Strange Addictions (yet again, loser status!) on TLC, I cranked open the blenda for some smoothie action.

Leftover sweet potatoes from last night are better lukewarm anyways.  It was about a half cup of sweet potatoes, half a banana, 1/2 cup plain greekyo, 1/4 cup almond milk, nutmeg, cinnamon, agave (for extra sweetness), and ice ice ice.

Laziness can only last so long, and experimenting in the kitchen was a must.  Gotta take advantage of open schedules before school starts again.

Recipe tomorrow! ¬†Don’t turn up your nose at my weird freaky food cravings.

After a walk with this crazy child, it was dinnertime, yet hunger was nowhere to be found.  I really need to stop eating dessert before dinnertime.  Where are parents when you need them?

I typically eat dinner even if I’m not hungry, because I don’t want to binge late at night. ¬†But I also don’t want to eat when I’m not hungry. ¬†Such a predicament-any suggestions?

I kept dinner light so I could load up on excess apple cake for the real meal.   I seared a raw tuna steak rubbed with a Caribbean jerk seasoning and sea salt, sauteed red pepper slices, cucumber, and onion, and laid it all over some expired fresh spinach.  Mustard has been MIA the past few days and I have not been a happy girl.

Spicy Honey-Lime Mustard Vinaigrette

1 Tbsp distilled white vinegar (or balsamic)
2 Tbsp dijon mustard
1 Tbsp honey
dash of nutmeg
3 drops of lime juice

This made the plate. ¬†When doesn’t mustard make a plate?
